Ingredients
Burgers
  • 2 tablespoons olive oil
  • ½ red onion
  • 1 bigger carrot
  • ½ cup mushrooms
  • 4 spring onions
  • 1 red pepper
  • 2 cups cooked lentils
  • ½ cup breadcrumbs
  • ⅓ cup almonds
  • 1 egg
  • 1 teaspoon ground red pepper
  • salt and pepper
Sauce
  • ⅔ cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon chopped dill
And more
  • green salad
  • tomato
  • red onion
Instructions
  1. Cook the lentils in salted water until it's tender and soft for about 10 minutes. Another option is to cook the lentils the day before or use canned lentils. If you opt for canned lentils keep in mind it needs to be rinsed and drained.
  2. Finely chop carrots, mushrooms, peppers, spring onions and red onions or grind in a food processor.
  3. Stew red onion on oil, add carrots, mushrooms, peppers and onions, and cook until all liquid evaporates and vegetables get tender and soft.
  4. Put crumbs, lentils, eggs, almonds, paprika, salt, and pepper in food processor, and grind all to form a uniform mixture, but not to turn the mixture into a puree.
  5. Transfer the lentils to the mixing bowl, add stewed vegetables, and use your hands to mix it all together. If the mixture appears quite moist, feel free to add more bread crumbs. The strength of burgers depends on how drained lentils are, how stewed vegetables is, and of course on the size of the eggs. The mixture should be similar to minced meat.
  6. You will get 8 beautiful burgers from this mixture, but if you prefer thinner burgers, then you can feel free to share the mixture into 10 parts. Use your hands to form the burgers. The mixture will be a very nice and easy to shape.
  7. Let burgers to stand while you make the sauce. Put all the ingredients for the sauce in the mixing bowl and stir well. When done, cover the top of mixing bowl and put it in the refrigerator.
  8. Heat 1 tablespoon of olive oil in the pan, and bake until the burgers are golden brown. It's about 4-5 minutes on each side.
  9. On sliced bun halves put chopped salad, then put the burger, coat the burger with the sauce, add couple slices of tomato and a few rings of red onion, finally put the other half of the bun.
  10. Serve with baked sweet potatoes, a salad of your choice or as a main dish, because all you need you already have in a burger.
