Nachos is a dish which originates from northern Mexico. This dish is made of tortilla chips which are covered with cheese-based sauce. Nachos are often served as a snack.

However, by adding more ingredients it can be served as a main dish. The original nachos was created by Ignacio “Nacho” Anaya in 1943, and it consisted of fried corn tortillas which were covered with sliced jalapeño peppers and melted cheddar cheese.

Ingredients
  • 2 bags corn tortilla chips in different flavors and colors, such as black bean or chili-flavored chips, lime flavored, yellow corn, red corn, or blue corn (Pick your 2 favorites)
Pico de Gallo Salsa:
  • 4 vine ripe tomatoes (chopped and seeded)
  • 1 small white onion (chopped)
  • 1 jalapeno pepper (finely chopped and seeded) for medium to hot heat level
  • 2 handfuls or ¼ cup, cilantro leaves, finely chopped (If cilantro is not to your liking you can use parsley as substitute)
  • Salt
Beef and Beans Topping:
  • 1 tablespoon of extra-virgin olive oil
  • 2 cloves garlic (chopped)
  • 1 small onion (chopped)
  • 1 jalapeno pepper (chopped and seeded)
  • 1 teaspoons to 2 tablespoons of cayenne pepper sauce (gives medium to hot heat level)
  • 1 teaspoon of salt
  • 1½ teaspoons of dark chili powder
  • 1 ½ ground cumin, half a palmful
  • 1 pound of ground sirloin
  • 1 can of black beans, drained (15 ounces)
Cheese Sauce:
  • 2 tablespoons of butter
  • 2 cups of milk
  • ¾ pound pepper jack cheese, shredded (2½ cups)
  • 2 tablespoons of all-purpose flour
Additional toppings, optional (Choose what you like):
  • Sliced avocado, dressed with lemon juice
  • Chopped black olives
  • Sour cream
  • Chopped scallions
  • Diced pimento
  • Hot pepper sauces
Instructions
  1. In the first step, arrange a mixture of two varieties of corn chips on a huge platter. If you want you can also use your broiler pan as a platter. Take a bowl and combine in it salsa ingredients and set aside for flavors to merge. Take a medium nonstick skillet and heat it over medium-high heat. Now, add garlic, oil, peppers and onion into the pan and saute for about 2 minutes, then add crumble and meat, using a wooden spoon. Use cayenne pepper sauce, cumin, chili powder and salt to season the meat.
  2. Cook meat for about 5 minutes, then stir in beans and reduce heat to low. Melt butter in a medium sauce pot and add flour to it. Now, cook flour and butter for about 1 to 2 minutes over moderate heat and then whisk in milk. Stir in cheese using a wooden spoon when milk comes to a bubble. Next, remove cheese sauce from the heat. In the last step, make sure to evenly pour cheese sauce over the huge spread of chips and then evenly top with beef and beans and the pico de gallo. You can serve it right away as it is or you can garnish it with your choice of extra topping.
