Serves: 4 servings
Ingredients
  • One and a half cups of all-purpose flour, and enough for flouring the board.
  • Three-quarter cup of sliced shallots.
  • Kosher salt.
  • Thirteen tablespoons of cold butter that is unsalted, and it should be split.
  • A cup of heavy cream.
  • Three or four teaspoons of ice water.
  • Three large eggs.
  • A quarter a cup of sliced basil leaves.
  • 10 pieces of a half an ounce of garlic-and-herb soft goat cheese. Here it is advised to use the Montrachet.
  • An eighth a teaspoon of fresh crushed black pepper.
Instructions
Mixing The Flour
  1. You will start by mixing the flour and about a quarter a teaspoon of salt in the bowl. After mixing them, you will add about one and a half sticks of butter in a dice, then add it to the flour mixture. You’ll then add pulse until the butter becomes the size of a pea. While the machine is still running, you’ll then add all the ice water, and keep processing till the dough is flaky, but do not over-process. You’ll then put the dough on a board, which must be floured, and gather it into a ball, then enclose it in a plastic wrap and keep it in the fridge for about 30 minutes.
Making The Tarts
  1. After the 30 minutes are gone, you will now roll the dough on the board, ensure that the board is floured. After that, you will put the dough into a tart pan of 9 inches, and the sides must be removable. Cut off the excess dough by rolling a pin over the pan. Apply butter to one side of an aluminum foil, a square shape, then fit into the pan, and also butter the bottom side. You can then fill the foil with beans or rice and let it bake for about 20 minutes. When done, take off the foil and beans from the shell of the tart. Ensure that you have pricked the bottom with a fork, then bake again for ten minutes.
Baking The Tart
  1. Melt the butter in a pan, and the shallots for about five minutes, then put the goat cheese in the food processor bowl and process it until it is tender. Add the basil, salt, pepper and cream, then mix thoroughly. Spread the shallot over the tart shell bottom, and pour the goat cheese over it, and bake for a maximum of 40 minutes until it is light brown at the top, and firm enough. Let it cool for about 10 minutes, then serve it.
