I’m a big pizza fan. I don’t mind eating it seven days a week. Having that in mind, it’s no wonder I’m always happy when I figure out some new and tasty ways to prepare pizza.
This time it’s Mediterranean low-carb pizza.
And you can make it even healthier if you swap soft cheese with light or low-fat cream cheese.
Now, let’s get to the work.
These pizzas make a perfect healthy snack for a binge – watching sessions (preferably for two).
Mini Toast and Basil Pizza
- 12 pieces toast
- 4 tsp tomato puree
- 12 pieces soft cheese
- 1 cup of milk
- Pinch of salt
- Prepare tomato puree. Spice it with salt and basil.
- Soak every piece of toast with milk, spread with tomato puree, and put the cheese at the top. Preheat the oven.
- Put pizzas in the preheated oven for a couple of minutes. Shred the basil.
- Take out pizzas from the oven, spread with basil, and serve.
How to make tomato puree
Pick mature, healthy and tough tomatoes. Wash it and cut into two pieces. Put the pieces in the stainless steel pot and boil on a medium heat for 10 minutes ( keep in mind tomatoes should relief the water ). Drain tomatoes and mash them to get a sauce. Add salt and few leaves of basil. Put the cap on the bottles and boil in boiling water for 20 minutes to sterilize bottles.
