9 Matcha Gluten Free Recipes

1. Gluten-free matcha cookies

2 sticks of butter
2 cups of rice flour (brown)
1 cup of organic cornstarch
¼ cup of matcha powder
1 tsp of xanthan gum
1 tsp of salt
½ tsp of baking soda
½ tsp of baking powder
1 cup of sugar or equivalent of some other sweetener
1 egg
2 tbsp of milk
1 tsp of vanilla
1 cup of white or dark chocolate chips

In one bowl mix butter, egg, milk, vanilla and sugar with mixer. When fluffy start adding the remaining ingredients. At the end add chocolate chips and mix lightly, until chips are distributed evenly. Make small balls from the dough and place them on baking paper in a baking dish. Put in preheated oven and bake for 12 minutes. Cool them before serving.

2. Gluten-free matcha banana bread

2 ripe bananas
1 ½ cup of gluten free flour blend with xanthan gum
½ cup of almond flour
2 eggs
1 tsp of vanilla
3 tbsp of matcha powder
1 cup of sugar
½ cup of coconut oil
Pinch of salt

Add all non-dry ingredients in a bowl and mix them with mixer. When the mixture unifies start adding dry ingredients. Oil the bread pan with coconut oil and add the batter, distributing it evenly. Bake in preheated oven (350 degrees) for half an hour.

3. Gluten-free matcha mochi

1 cup of white rice flour
2 tbsp of matcha powder
1 cup of coconut milk
½ cup of white sugar (brown one will change the color of your mochi)
2 tbsp of butter
1 tsp of baking powder

Add all dry ingredients in a bowl and whisk it well. Add butter and milk and stir until you get a uniformed mixture. Pour the mixture into the oiled baking dish and put the dish in preheated oven (325 degrees) for 20 minutes. Cut into cubes and sprinkle with some matcha powder.

4. Gluten-free matcha bars with coconut

1 ½ cup of gluten free flour
½ cup of almond flour
3 tbsp of matcha powder
1 tsp of baking powder
1 cup of coconut (shredded)
1 cup of sugar
1 stick of butter
2 eggs
1 tsp of vanilla
½ cup of toasted pecans (chopped)

In two different bowls add dry and wet ingredients and whisk and mix. Then add the wet ingredients to a bowl with dry ones. Stir until you get an even mixture. Pour the batter into oiled baking dish and bake in preheated oven at 350 degrees for 25 minutes.

5. Gluten-free matcha chia pudding

3 tbsp of chia seeds
1 tbsp of matcha powder
1 ½ cup of coconut milk
½ cup of coconut (sweetened if you like it)

Add all ingredients in a glass bowl. Seal it and leave in refrigerator for a couple of hours. Stir once after an hour in a fridge and once again before serving. Garnish with some blueberries or almonds.

6. Gluten-free matcha muffins

3/4 cup of almond flour
½ cup of coconut flour
2 tbsp of matcha powder
1 egg
½ cup of oil
½ cup of milk
½ cup of sugar
1 tsp of vanilla extract
1 tsp of baking powder
½ tsp of baking soda

For glaze:

½ cup of chocolate chips (dark or white)
1 tbsp of coconut oil
Chopped pistachios or nuts

Prepare muffin pan and paper liners. Put egg, oil, milk, vanilla and sugar in a bowl and mix it well. Add one by one all the remaining ingredients and stir well. Fill the liners (about ¾ of a cup, because they will grow). Bake them in preheated oven (350 degrees) for 20 minutes.
Melt the chocolate with oil and spread over muffins garnishing with chopped pistachios or nuts.

7. Gluten-free matcha crepes

1 ½ cup of gluten free flour blend
2 eggs
2 tbsp butter
1 ½ tbsp sugar
1 cup of milk
½ tsp vanilla extract

Mix all the ingredients into the blender and blend for a few minutes. Heat the pan and add enough of batter to cover it, flip after a minute or two. You can eat it with chocolate or fruit toppings of your choice.

8. Gluten-free matcha pancakes

1 cup of spinach
2 eggs
½ cup of gluten free oats
½ cup of cottage cheese
1 tsp of matcha powder
3 tbsp of butter
1 tsp of vanilla extract

Mix all the ingredients in food processor and mix until smooth. Melt the butter and use it to grease pan on which you will bake the pancakes. Use your favorite gluten-free toppings and serve with pancakes.

9. Gluten-free matcha pop tarts

Tart:

1 cup of gluten-free flour mixture
¼ cup of coconut oil
¼ cup of water
Pinch of salt

Filling:

1 tbsp of matcha powder
2 tbsp of maple syrup
¼ cup of coconut milk

Mix the flour and oil then gradually add water while mixing the batter. Leave it in a freezer for a while. Mix ingredients for filling and leave them aside. Flatten the batter and cut it into rectangles. On one-half put the filling and close them with another half. Use the fork to seal ends well. Put in a freezer for another 15 min and then bake in preheated oven (375) for 15 min. Garnish with remaining filling.
