9 Matcha Cookie Ideas

1. Matcha almond cookies

1 stick of unsalted butter
½ cup of powdered sugar
1 cup of all purpose flour
1 tbsp of matcha powder
pinch of salt
1/3 cup of chopped almonds

Combine flour, Matcha, and salt. Use the mixer to mix butter and sugar until fluffy and then add flour mixture. Add almonds and briefly mix. Roll the dough into a 1-inch thick log. Cover it and put in the freezer for 30 minutes. Cut the dough into squares or circles and arrange them on baking paper on baking sheets. Bake them in preheated oven at 325 F for 15 minutes.

2. Matcha chocolate chip cookies

2 ½ cups of ground oats
2-3 tbsp of matcha powder
1 tsp of baking soda
¼ tsp of salt
½ cup of sugar
½ cup of coconut oil
½ cup of applesauce, unsweetened
1 egg
1 tsp of vanilla extract
1/3 cup of chocolate chips

In one bowl combine oats, salt, baking soda and sugar and in the other oil, applesauce, egg, and vanilla. Combine wet and dry ingredients. Add matcha and chocolate chips and stir briefly. Leave the dough in the fridge for an hour. Make balls from the dough and flatten them on the baking sheet. Bake for 10 min.

3. Soft matcha cookies

1 stick of butter
1 cup of granulated sugar
1 cup of all-purpose flour
2 eggs
1 tsp of matcha powder
1 tsp of baking powder
Pinch of salt

Combine sugar and butter in the mixer until fluffy. Add eggs one at the time. Combine dry ingredients in the other bowl then add to butter mixture. Put the dough in the fridge for at least an hour. Roll the balls from the dough and flatten them a bit when arranging them on the baking sheet. Bake them in the preheated oven for 15 minutes at 325.

4. Matcha swirl cookies

1 cup of butter
1 cup of sugar
1 tsp of vanilla
2 eggs
3 cups of flour
½ tsp of baking powder
½ tsp of salt
1½ tbsp of matcha powder

Mix butter and sugar in large bowl, when unified add vanilla and eggs. Mix well then add flour salt and baking powder. Divide the dough into two balls. Wrap one and leave in the fridge and in the other half add matcha and mix until color is unified. Also, leave in refrigerator for at least half an hour. When ready take out and roll both dough balls in squares. Place one on top of the other and roll into the log. Cut the cookies and place them on the baking sheet. Bake in preheated oven for 15 min at 325 F.

5. Iced matcha cookies

For cookies

½ cup of butter
2 cups of flour
1 cup of sugar
2 tbsp of matcha powder
2 egg yolks
¼ tsp of vanilla extract
½ cup of sour cream
½ tsp of baking powder
Pinch of salt

For icing

2 cups of powdered sugar
4 tbsp of water
1 tbsp of butter
1 tbsp of corn syrup

Combine butter with sugar and mix until fluffy. Add yolks, vanilla, and cream. In other bowl combine dry ingredients. Mix the dry and wet ingredients and roll it a sheet 1 inch thick. Leave it in a fridge for 30 min. Cut the cookies with the cookie cutter or with a knife. Bake in preheated oven for 15 min at 325 F.
Mix all the ingredients for icing and whisk until smooth. Dip the top of every cookie in icing and let it set before serving.

6. Matcha cheese cookies

2 ½ cups of flour
1 tbsp of matcha powder
½ cup of sugar
1 cup of butter
1 tsp of vanilla
1 egg
3 oz of cream cheese
two pinches of salt

Combine all ingredients except flour and mix until fluffy. Gradually add flour and matcha at the end. Roll the dough into the log and leave in the fridge for an hour. Take the log and cut it into cookies, arrange them on the baking sheet. Bake for 10 minutes.

7. Matcha cat’s tongue cookies

1/4 cup of butter
1/4 cup of powdered sugar
2 tsp of matcha powder
2 egg whites
1/2 cup of flour
Two pinches of salt

Combine butter and sugar and mix until fluffy. Add egg whites and continue to mix until everything is well combined. Gradually add all the remaining ingredients and mix until very smooth. Put the mixture into the pastry bag. Put the bag in the freezer for 30 min. squeeze the mixture on baking sheet forming lines. Bake for 7 minutes in preheated oven at 400 F.

8. Matcha filled chocolate sandwich cookies

For the cookies:

1 cup of brown rice flour
¼ cup of tapioca flour
6 tbsp of maple syrup
3 tbsp of cocoa powder
¼ cup of coconut oil
½ tsp of cinnamon
1 tsp of vanilla extract
Pinch of salt
½ tsp of baking powder

For the filling:

1 cup of cashews
½ cup of almond milk
2 tsp of matcha powder

Mix maple syrup, oil, and vanilla and set aside. Whisk dry ingredients in separate bowl and add wet ones in. mix well until the dough is fully incorporated. Leave it for a couple of minutes. Scoop balls of dough and place them on the baking sheet. Bake them for 10 minutes in preheated oven at 325 F.
For the filling mix all the ingredients in the blender and blend until smooth. Flip one cookie put the filling on top and top it with other cookies. Repeat until you use up all the cookies.

9. Matcha Oreos

1 stick of butter
¾ cup of powdered sugar
2 tbsp of matcha powder
¼ cup of cornstarch
½ tsp of vanilla extract
pinch of salt
1 box of Famous Chocolate Wafers

Combine butter and sugar and mix until fluffy. Add matcha, cornstarch, vanilla and salt gradually and mix until unified. Transfer the mixture into a pastry bag. Squeeze a blob of the mixture into the center of cookie (Famous Chocolate Wafers) and top with the other one.
