Fried chicken is, in fact, a very popular dish in many homes around the globe, for both kids and adults.
It is usually eaten with the addition of mashed potatoes and salad. We must admit it’s not a really healthy combination, but real gourmands don’t care too much of health. The taste is what matters.
These tips bring a soft and juicy chicken with the crispy crust on your table. And one more thing – we won’t be using eggs! How’s that sound?!

1. Marinade

Dip chicken chunks in a liter of buttermilk, add a little garlic, lemon peel, lemon juice, salt, and pepper. This is the basic recipe for the marinade so you can add the other spices of your choice, such as bay leaf, a sprig of thyme and rosemary. Cover the bowl, and let the meat ‘rest’ in this mixture for four hours in the refrigerator before frying.

2. Salt, salt, salt

Please note that you will not be able to spice a crispy crust when the meat is fried, so make sure to add enough salt to the marinade in order to ensure that meat gets enough salinity. Do not be afraid to add up to two teaspoons of salt per liter of the marinade.

3. Draining and home temperature

Take the meat out of the refrigerator and the marinade, and put it on the grid so that excess liquid expires and the surface of meat stays moist enough so that flour has something to stick to. And one more thing, allow the meat to naturally warm to room temperature which will make frying in hot oil much easier.

4. Surprise ingredient

Mix half a teaspoon of cayenne pepper with 3.5 cups of flour, and roll the chicken chunks in the mixture from both sides, preheat the oil in the pan at 370 degrees, and finally, put the chicken chunks into the pan.

5. Fry it gently

Properly fried chicken is the most important step in the whole procedure because no one wants to bite into a piece of bloody meat. Equal pieces of chicken fry together in vegetable oil in the deep pan for 10 to 12 minutes, or until the middle of the meat reaches a temperature of 160 degrees, which you can check using the cooking thermometer.

6. Using oven

If you achieve a crispy golden crust before the middle of the meat reaches the proper temperature, remove the meat from the oil, place it on the grid and finish baking it in the oven. Enjoy!
