10 Vegetarian Lasagna Recipes

Pumpkin, mushrooms, eggplant, zucchini, tomatoes… All these veggies can be a decent replacement for ground beef in a lasagna recipe. It is healthier and an excellent meal for vegetarians. Every vegetable in these recipes contains so many benefits that you might reconsider your shopping list next time you go to the supermarket. Those are pretty simple but very delicious meals that you can prepare from spring to fall, and you won’t be afraid that your kids eat junk fast food.

1. Lasagna with aubergines

For this delicious lasagna recipe, you are going to need 3 red peppers, 2 aubergines, olive oil, tomato sauce, 300 g of lasagna sheets, the ½ quantity of white sauce, vegetarian cheese and cherry tomatoes.

Peppers and aubergine are decent substitutes for ground beef. Peppers are able to spice every meal, but aubergines give it fullness and compactness. Besides, aubergines are pretty healthy and nutrient.

An aubergine, also known as eggplant, garden egg or brinjal are full of fiber, potassium, vitamins C and B-6. They can decrease blood cholesterol, protect body cells from damage caused by free radicals and in turn prevent tumor growth and spread of cancer cells. Some studies showed that anthocyanin within eggplant skin is a powerful antioxidant that prevents age-related mental disorders.

2. Lasagna with spinach and mushrooms

Remember Popeye the Sailor Man?! How could you forget one of the favorite cartoon characters on the planet? Well, it wasn’t just a cartoon, Popeye, actually helped many parents to persuade their kids to start eating spinach!

And believe or not, spinach truly is one of the healthiest food on earth. It is an excellent source of vitamin A, B2, C and K, magnesium, folate, iron, calcium, selenium; full of omega-3 fatty acids, loaded with flavonoids. All this helps your body in a thousand ways, so you should eat spinach as much as you can!

Ingredients: ½ cup of grated carrot, ½ tsp of oregano, 6 cooked lasagna noodles, ricotta cheese, chopped spinach, 2 eggs, ½ cups of sliced zucchini, 1 cup of sliced fresh mushrooms and 3 cups of shredded mozzarella cheese.

3. Lasagna with basil and cheese

Basil is pretty common aromatic herb, and you probably use it every day, but did you know that it has so many healthy properties? Studies showed that basil has anti-inflammatory and anti-stress benefits.

It is an excellent pain and fever reducer, it prevents diabetes and protects your liver. Basil has the power to fight cancer and boost your immune system.

Here is the deal… Use: 1 package of lasagna noodles, 1 pound of fresh mushrooms, ¾ cup of green bell pepper, ¾ cup of chopped onion, 3 cloves of garlic, 2 tbsp of vegetable oil. Fill your lasagnas with 2 jars of pasta sauce, 1 tsp of dried basil, 2 eggs and 1 container of ricotta cheese, a little bit of mozzarella and Parmesan cheese.

4. Lasagna with butternut pumpkin

800g of butternut pumpkin cut into 1cm-thick slices and bake with 1 ½ tbsp of olive oil. In frying pan bake 1 brown onion, 2 garlic cloves, 1 red pepper, 1 eggplant and 200g of mushrooms.

Add tomatoes with oregano and basil, at the end add 80g of spinach. Prepare a white sauce with 2 tbsp of flour and 2 cups of reduced-fat milk. Grease baking dish, spoon half of the onion mixture into the dish, arrange half the pumpkin over onion mixture, place half the lasagna sheets over pumpkin, repeat layers.

Spoon the sauce over top, and sprinkle with cheese. Bake for 40 minutes. Benefits of butternut pumpkin: prevents high blood pressure, promotes regularity, improves eyesight, keeps bones strong, protects your skin, boosts immune function, reduces inflammation.

5. Lasagna with an extra garlic

Your favorite “meatless” lasagna with mushrooms and squash prepare with some extra garlic cloves, spice it with ricotta and parmesan cheese, and spice it with fresh parsley and kosher salt.

Here is the recipe: Make the filling for lasagna with 2 bunches of lacinato kale, 1 bunch of collard greens, 4 garlic cloves, kosher salt, and pepper. Prepare a white sauce with unsalted butter, flour and 4 cups of whole milk. Top your lasagna with 2 eggs, sprinkle it with Parmesan and mozzarella.

8. Lasagna with black olives

Are you ready for antipasti lasagna? Yes, it is possible! You don’t have to cook the sauce for lasagne, just use 190g of red pepper and ricotta pesto.

For delicious filling use a large handful of black olives, 280g of roasted artichokes, 240g of dried tomatoes, and 10g of Gruyère and some fresh basil. It only takes you 15 minutes to cook this tasty meal. It is not just quick and tasty, it is also a very healthy meal.

9. Lasagna with fresh nutmeg
